Lime Salsa

Salsa. They are so many varieties that we never make the same one twice. This salsa is sweet + tangy, inviting you to eat more and more. The lime balances out the flavor, not to citrusy, just right.  Use smoked paprika to allow for the flavors to mingle. I only add a bit of cilantro but you can add more if you love it.  It's great with chips but works even better as a topping for fish tacos!

2. Large Tomatoes, cored + chopped
1 Med. red onion, chopped finally
Pinch of Cilantro
3 Cloves garlic, minced
1/4 Cup fresh lime juice [roughly 1 lime]
1 Jalapeno pepper minced, remove stem and seeds
1/2 tbsp. White balsamic Vinegar
1/4 tsp. Chili powder
1/4 tsp. Smoke paprika 
Pinch of cumin
salt + pepper to taste
