Lime Salsa

Salsa. They are so many varieties that we never make the same one twice. This salsa is sweet + tangy, inviting you to eat more and more. The lime balances out the flavor, not to citrusy, just right.  Use smoked paprika to allow for the flavors to mingle. I only add a bit of cilantro but you can add more if you love it.  It's great with chips but works even better as a topping for fish tacos!

2. Large Tomatoes, cored + chopped
1 Med. red onion, chopped finally
Pinch of Cilantro
3 Cloves garlic, minced
1/4 Cup fresh lime juice [roughly 1 lime]
1 Jalapeno pepper minced, remove stem and seeds
1/2 tbsp. White balsamic Vinegar
1/4 tsp. Chili powder
1/4 tsp. Smoke paprika 
Pinch of cumin
salt + pepper to taste



Father's Day Delight


For Father's day my Father's one request was to get a Bacon Sundae from Burger King.  Don't get me wrong, I love bacon.  Bacon has an amazing ability to elevate anything to the next level and beyond, yet the Burger Kings's Bacon Sundae left me wanting more.  Maybe bacon flavored ice-cream?  Needless to say my Father enjoyed his treat on his special day.

Simple Hors d'oeuvres

Every other week we get together and cook with friends. Our contribution this week is bite size mash-potatoes with a spin. Purple potatoes and herbed goat cheese make them unique + tasty!
